I love it when I can get my coffee more than one way in a day. This smoothie is not only packed with protein and fiber, it has an added boost from the instant espresso powder. You can throw it together in a snap, and you don’t need a fancy-schmancy high-tech blender to make it drinkable.
By using quick oats, instead of old fashion oats, you will get smooth, chunk-free smoothie, even if you don’t own a Vitamix. We can’t all own $500 blenders, right? But if you do have one, more power to you, literally.
I love making smoothies with frozen fruit, and no ice. They are more filling and again, easier to blend into a smooth consistency.
In this smoothie I used Cafe Bustelo Instant Espresso Powder and Trader Joe’s Creamy, Salted Almond Butter. I recently read an Almond Butter Brand Comparison Article in which Trader Joe’s was voted the best. Having tried several brands, I have to agree! It’s mild, not bitter, so it doesn’t assault your taste buds like some.
This is your coffee and breakfast (or second breakfast) all rolled into one! Sip happy 🙂
- 1 1/2 frozen bananas, broken into 6 pieces
- 2 Tablespoons quick oats
- 3 Tablespoons Almond Butter
- 1 1/2 teaspoons instant espresso powder
- 1/4 teaspoon cinnamon
- 1/2 cup milk (whatever you prefer, cow's milk, almond milk, etc)
- Place ingredients in a blender, in the order listed, and blend until smooth.
If a sweeter, more dessert-like smoothie is desired, add 1 teaspoon of honey.
