You have to try this Dominican inspired Pollo Guisado (Latin Braised Chicken) from the Eat More Food Project.
This recipe is so tasty! Chicken is marinated in citrus, spices, olives, garlic, worcestershire, and a few other ingredients, then browned in a big ol’ pot and smothered in tomato sauce to cook for a bit and render the most flavorful broth. Broth which you must soak up every last bite of with some white rice. Yellow rice would also be very tasty.
These bowls are heavenly. It’s really ALL ABOUT the mojo sauce. This recipe has quite a few steps so I’ve modified it over the years to make it a bit simpler, but the flavors are AMAZING. If you don’t like quinoa, just make rice instead. Don’t skip the mojo sauce, whatever you do.
