When I think of soup, I usually think of it being lovingly ladled by a grandma, but really, when I think about my favorite soups, they were probably all crafted by Philippine, Korean and Thai geniuses…maybe grandma geniuses.
Whether it’s ramen, tom kha gai, or pho, there is something about that umami flavor that is addicting.
Many of these classic Asian soups take hours to develop the complex flavors of a fabulous broth base, but this Thai Chicken Soup is a lovely shortcut version that comes together in less than 30 minutes and is a pretty pleasing alternative to purchasing some from a restaurant.
The best part? It has SIMPLE ingredients that will not require you to visit an Asian market. It’s weeknight achievable.
