I’ve always been of the mindset that food exists not just to fuel our bodies but also to taste good, otherwise there would be no variety and we could all just eat (fill in the blank) to maintain energy. There are particular foods which simply don’t taste good, at least not upon my first encounter with them. But I have always been determined in my belief that every food has the ability to taste delicious, it’s only a matter of finding the right way to prepare it. The only exception to this, (in my opinion) is eggplant. Cook it anyway you would like and it still taste like fibrous, slightly rank, nothingness. But I digress.
Coconut flour. I love the health benefits of such an ingredient, but every time I have used it my baked goods have turned out mealy and inedible. Everything has gone in the trash. Until these brownies.

I baked mine for a total of 40 minutes, but my oven tends to take a little longer. I could tell they were done because the top gradually lost it’s sheen from the edges, inward. I would also recommend lining the pan with parchment paper in addition to greasing it.
